Recipe: Easy Pickled Beet + Avocado Tartine


These pretty and vibrant tartines are deceptively super easy to pull together. During the work week, I find myself making a variation on avocado toasts, and I always go back to this one as a favorite. It requires very little prep time and it's a great way to get good fats and probiotics in! Even if I'm just enjoying a solo lunch at home, I make it pretty by serving it on our Teak Serving Board

Serves 1

Ingredients - 

1 slice of rustic bread

Ghee or olive oil 

Shredded pickled beets (you can make yourself or pick up a jar from your local market)

Half an avocado 

Pumpkin seeds or pepitas 

Microgreens (Trader Joe's is where I find mine!) 

Flaky Salt

Method - 

Give the toast a generous slather of ghee and avocado, top with pickled beets and microgreens, and sprinkle with pumpkin seeds. Finish off with lemon pepper and flaky salt. 

Prep + cooktime under 10 minutes
